There’s nothing quite like a warm bowl of grits—creamy, comforting, and full of flavor. My Savory Southern-Inspired Coconut Grits take this classic dish to the next level, using rich coconut milk for a smooth, slightly nutty taste that pairs perfectly with savory add-ins.
You can make this recipe with either canned or homemade coconut milk. If you’re feeling adventurous, I encourage you to try making my Homemade Coconut Milk—it’s fresh, simple, and makes the grits even more decadent. To boost the flavor, sauté veggies like green onion, mushrooms, garlic, and red bell pepper, then fold them into your grits for a hearty, flavor-packed dish. This version is not only delicious but also versatile enough to enjoy as a main meal or a flavorful side. And if you’re in the mood to experiment, why not try my Popcorn Grits recipe? Yes—grits made from popcorn! It’s a fun and creative twist that brings new life to a Southern staple.

If you have popcorn, you have grits! 🍿 It may sound surprising, but with just a little kitchen creativity, you can transform everyday popcorn into creamy, comforting grits. The process is simple: place yellow or white unpopped popcorn kernels into a high-speed blender and blend until the texture resembles coarse sand. The high-speed blender is key—it ensures your kernels break down into a fine, even grain that cooks up beautifully. Store your homemade grits in an airtight container for up to 3 months in your pantry or dry goods storage area. Once you’ve got your popcorn grits ready, the possibilities are endless. My favorite way to enjoy them is in a bowl of Southern-inspired Savory Coconut Grits—rich, creamy, and full of comfort. Your browser does not support viewing this document. Ever since I first arrived in Mexico, I’ve dreamed of exploring the country beyond its well-known tourist destinations. Mexico is an incredibly rich and vibrant country—cost-effective to explore once you’re inside, especially if you’re on a tourist visa or hold temporary residency. The ease of travel between states makes day trips like this one not only possible but deeply rewarding. Recently, my son and I took a day trip to Izamal, a place that has been on my radar for quite some time. Known as La Ciudad Amarilla—The Yellow City—Izamal is one of Mexico’s designated Pueblos Mágicos, or “magical towns,” a recognition given to places rich in culture, history, and beauty. Our journey began at the Mérida train station, where we purchased our tickets and boarded a comfortable ride through the Yucatán landscape. Traveling by train gave us time to relax and take in the scenery before arriving in Izamal’s golden glow. Stepping off the train felt like stepping back in time. The entire city is bathed in yellow paint, with colonial buildings, cobblestone streets, and a warm, welcoming vibe that immediately drew us in. We wandered the quiet streets, visited artisan shops filled with handcrafted goods, and explored a small local market that offered a glimpse into everyday life. We stumbled upon a beautiful little shop where we browsed local arts, crafts, jewelry, and home items—each piece telling a story of the Yucatán’s rich culture. We marveled at the historical architecture, the fusion of Mayan and Spanish colonial influence, and the peaceful energy that surrounded us. This trip was more than sightseeing—it was about experiencing a different side of Mexico, one that’s often overlooked. Too many people focus solely on beach resorts or tourist-heavy areas. But the interior of the country holds so much depth: ancient ruins, cenotes, quiet towns, and welcoming communities steeped in tradition. This day trip reminded me why I fell in love with Mexico—and why I continue to explore its many treasures. I plan to visit more ruins, cenotes, and magical towns across the country. Each journey is another opportunity to share the real Mexico with those curious about traveling here with intention and openness. So take a walk with me through Izamal. That’s exactly what I did with this Kung Pao Cauliflower recipe—only, I gave it a spicy, zesty Mexican twist. Think of it as a culinary passport: bold Sichuan flavors meet smoky chiles, fresh lime, and just the right amount of crunch. It’s saucy, tangy, fiery, and—best of all—ready in under 30 minutes. Perfect for weeknights when you want takeout vibes without actually… taking out. The cauliflower soaks up all that sticky-sweet-heat magic, while a splash of lime juice and a sprinkle of roasted peanuts (or pepitas if you’re feeling extra Mexi-fied) seal the deal. Serve it over rice, scoop it into tacos (yes, tacos), or eat it straight from the pan—no judgment. So the next time your taste buds can’t decide between East and West, let them have both. This dish is proof that cauliflower doesn’t have to be boring—it can throw a fiesta and a kung fu kick at the same time. Quick. Quirky. Flavor-packed. Who knew cauliflower could party like this? In Mexico, the vibrant hibiscus flower is known as jamaica—a staple in aguas frescas and teas. I decided to give it a twist and turned it into a creamy hibiscus latte with coconut cream. Bright, tangy, slightly floral—and so easy to make. A little taste of Mexico in every sip. Would you try a hibiscus latte? #Hibiscus #Jamaica #TravelAndTaste #PlantBasedSips #MexicoFlavors Leaky windows, poor construction, barking dogs, and noisy neighbors - I couldn't take it! My last apartment wasn't livable, and I knew I had to make a move. So, I moved into a new unit, and I absolutely love it! It feels like home and I now I have less anxiety and more peace.
