Lately, I’ve been making weekly trips to Bazar Los Frailes, a local market in San Miguel de Allende, Mexico, that offers farm-fresh eggs in their natural, unpasteurized state—no refrigeration, just fresh from the farm. If you’ve been curious about how to safely handle and store these gems, you’re in the right place. In this article, I will guide you through everything you need to know—from sourcing to cooking your eggs in a way that retains their nutritional value and flavor. Plus, I’ll share tips on how to create a balanced plate that supports your overall well-being.
So, are you ready to elevate your breakfast game with farm-fresh eggs while keeping it healthy and easy on your digestion? Keep reading.
1. Finding Farm Fresh Eggs To get the best quality eggs, look for local farmers’ markets, community-supported agriculture (CSA) programs, or even local farms that offer direct sales. Fresh eggs often have brighter yolks and a richer taste compared to store-bought options.
2. Sanitizing and Storing Farm Fresh Eggs
When you bring farm-fresh eggs home, it’s important to handle them properly. To sanitize, gently rinse the eggs under warm water without soap, or wipe them with a damp cloth. Avoid soaking them, as this can remove the natural protective bloom. Store your eggs in the fridge to maintain freshness, ideally in the carton or a covered container to prevent odor absorption.

3. Cleaning and Sanitizing Before Use
If you prefer to clean your eggs right before cooking, lightly rinse them under warm water. For extra precaution, you can use a solution of water and a little vinegar to wipe the shells.
4. Preparing Eggs for Easy DigestionTo make your eggs more digestible, especially if you have digestive sensitivities, cooking them as a soft scramble is ideal. This method helps retain moisture, making the eggs softer and easier on your stomach.
Here’s how to do it:
• Soft Scramble Technique: Whisk your eggs with a bit of water, which creates steam during cooking and helps keep the eggs fluffy and moist.
• Add Healthy Fats: Incorporate a healthy fat like olive oil, avocado oil, or a small amount of butter to enhance the creaminess and improve nutrient absorption.
• Steam for Moisture: Cook on low heat, stirring gently to create soft curds. Adding a splash of water will steam the eggs, preventing dryness and locking in moisture.
5. Balancing Your Plate for Optimal Nutrition
Round out your meal with nutrient-rich additions like steamed spinach, fresh tomatoes, avocados, or a side of raw veggies. This not only boosts the nutritional profile of your meal but also adds fiber, vitamins, and healthy fats, making it a well-rounded plate.
